Peach Crisp Sugar Free
Ingredients
4 C. peaches, peeled and sliced
5 Tbsp. minute tapioca
2 Tbsp. vegetable shortening, melted
1/2 C. unsweetened apple juice concentrate
1/2 tsp. cinnamon
Topping:
3/4 C. flour
1/3 pecans, chopped
1/4 tsp. cinnamon
1/4 C. vegetable shortening
Cooking Instructions
Preheat the oven to 350 degrees F. Oil a 9 by 9 by 2-inch glass or ceramic baking dish. Drain peaches well; pat dry with paper towel. In a large bowl, stir together all ingredients, except topping. Pour into prepared dish and let sit for 10 minutes. Add topping and bake for 55 minutes, or until topping is crisp and slightly golden. Remove from oven and place on wire rack to cool. Serve warm or cold. Store in the refrigerator; can be frozen and reheated. Topping: In a medium sized bowl, stir together all the ingredients. Spoon topping over any pie or fruit crisp and smooth by hand.
