Passover Honey Cake
Ingredients
1 C. honey
1/4 C. orange juice
Grated rind of 1 orange
3 eggs, separated
1 tsp. vegetable oil
1/2 C. sugar
1/2 tsp. ginger
1 3/4 C. matzo meal
1/2 tsp. salt
1 tsp. coffee; instant
1 tsp. cinnamon
1/4 tsp. cloves
Cooking Instructions
Heat honey to boil; add orange juice and rind. Cool. Beat egg yolks. Add oil and sugar, sift together matzo meal and dry ingredients. Add dry ingredients and honey to egg yolks. Fold in stiffly beaten egg whites. Bake in one oblong or 2 loaf pans. Line pan with wax paper. Bake at 300 degrees for 50 minutes.
