Party Cake
Ingredients
4 1/2 C. cake flour; sifted
4 1/2 tsp. baking powder
1/2 tsp. salt
1 Tbsp. lemon rind; grated
3/4 C. butter; or shortening
2 1/4 C. sugar
1 1/2 C. milk
1 tsp. vanilla
5 egg whites; stiffly beaten
3 egg yolks; well beaten
Fluffy orange frosting:
1/4 C. sugar
1/2 tsp. cream of tartar
1/8 tsp. salt
2 egg whites
1/4 C. cold water
1 tsp. orange flavoring
1/2 tsp. vanilla extract
Orange filling:
1 C. sugar
5 Tbsp. cake flour
Dash salt
1/2 C. orange juice
3 Tbsp. lemon juice
1/4 C. water
1 egg; well beaten
2 tsp. orange rind; grated
2 tsp. butter
Cooking Instructions
Sift flour once, measure, add baking powder and salt and sift together three times. Add lemon rind to butter and cream thoroughly. Add sugar gradually, and cream together until light and fluffy. Add flour, alternately with milk, a small amount at a time, beating after each addition until smooth. Add vanilla. Fold in egg whites quickly and thoroughly. Fill greased 10 inch layer pan with one third of mixture. To remaining mixture, add egg yolks and blend. Turn into two greased 10-inch layer pans. Bake layers in moderate oven 375 degrees for 25 to 30 minutes. Arrange white layer between yellow layers, Spread Orange Filling between layers and Orange Frosting on top and sides of cake. Sprinkle top with orange coconut, made by blending 4 ounces shredded coconut and 1 1/2 tsp. grated orange rind. Orange frosting: Fill a large saucepan with about 3 inches of water. Heat until water begins to simmer. Turn heat off. Then in a 2 quart straight sided heat proof bowl combine the sugar, cream of tartar, salt, egg whites and cold water. Reheat water in pan until it is again simmering, but not boiling. Set bowl in hot water and beat with rotary beater until frosting stands in peaks about 5-7 minutes. Remove from water and add orange flavoring and vanilla and beat a few minutes longer to blend and to firm up the frosting. Orange filling: Combine sugar, flour, and salt in top of double boiler; add fruit juice, water, and egg, mixing thoroughly. Place over boiling water and cooker for 10 minutes, stirring constantly. Add orange rind and butter. Cool. Makes enough filling to spread between two 9-inch layers (generously), or between three 10 inch layers.
