Parkin Cake
Ingredients
4 ounces whole-wheat flour
8 ounces rolled oats
4 ounces coarse oatmeal
Pinch salt
1/2 tsp. baking soda
1/4 tsp. baking powder
3 tsp. ginger powder
4 ounces butter
1/4 pint molasses
1 ounce sugar
1 Tbsp. honey
3 ounces milk
2 eggs, beaten
3 ounces apple juice
Cooking Instructions
Preheat oven to 325 degrees and line a 9 inch square tin with waxed paper. Mix first 7 ingredients. Put butter, molasses, sugar, and honey in a pan and bring to boiling point. Stir occasionally. Pour mixture over dry ingredients and mix thoroughly. Heat milk, eggs and apple juice to blood temperature, do not worry if it curdles. Add to the rest of the ingredients. Mix well and spoon into the baking tin. Bake for 30-35 minutes. Brown Sugar is also known as Barbados Sugar.
