Pancakes
Ingredients
1/2 C. unbleached white flour
1 C. whole wheat flour
1 tsp. baking powder
1 C. nonfat milk
2 egg whites, slightly beaten
1/2 to 1 C. fresh or frozen blueberries
1 Tbsp. orange bits (optional)
Cooking Instructions
Sift dry ingredients together. Combine milk and egg whites. Stir into dry ingredients just until moistened. Carefully stir in blueberries. Drop batter onto heated nonstick pan or griddle. Cook until bubbles appear, turn and cook other side. Serve warm with sauce, as desired.
