Oven Roasted Potato Wedges
Ingredients
4 baking potatoes, unpeeled (about 2 pounds)
2 Tbsp. olive oil, or vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
1 Tbsp. fresh rosemary, minced, or 1 tsp. dried rosemary, crushed
1/2 tsp. salt (optional)
1/4 tsp. pepper
Cooking Instructions
Cut potatoes lengthwise into wedges. Place in a greased 13 by 9 by 2 inch baking pan. Drizzle with oil. Sprinkle with onion, garlic, rosemary, salt, if desired, and pepper. Stir to coat. Bake, uncovered, at 400 degrees F. for 45 to 50 minutes, or until tender, turning once.
