Orza With Spinach And Feta Cheese
Ingredients
1 C. orzo pasta
1-1/4 tsp. olive oil
3/4 medium onion, minced
7 oz. frozen chopped spinach, thawed, well drained
2 Tbsp. feta cheese plus 2 tsp., crumbled
freshly ground black pepper, to taste
Cooking Instructions
Cook the orzo according to package directions. Drain. Heat oil in a skillet over medium high heat. Add the onion and Saute 5 minutes. Add the spinach and Saute 4 more minutes. Toss the onion spinach mixture with the hot orzo. Add feta cheese, ground pepper, and toss well. Serve immediately.
