Orange Tarragon Carrots
Ingredients
1 pound carrots, peeled, sliced in 1/2-inch coins
1/3 C. orange juice
2 Tbsp. honey
1 tsp. butter, or 1 tsp. margarine
1/2 tsp. dried tarragon
1/4 tsp. salt
dash pepper
Cooking Instructions
Combine all ingredients in 1-1/2 microwave safe casserole. Cover and microwave on high 9 to 12 minutes, or until carrots are tender, stirring every 4 minutes. Let stand, covered, 3 minutes before serving.
