Orange Sprouts
Ingredients
4 C. Brussels sprouts or 2 pkg. frozen
boiling salted water
3 Tbsp. butter
1 Tbsp. flour
1/4 tsp. salt
1/2 C. milk
1 egg yolk
1 tsp. grated orange rind
1/4 C. orange juice
2 Tbsp. lemon juice
2 oranges, peeled and cut into bite-size pieces, drained
Cooking Instructions
Trim the sprouts and cook in boiling salted water or according to package directions until crisp-tender. Drain. Melt 1 Tbsp. butter and blend in the flour. Stir in the salt and milk and bring to a boil, stirring until thickened. Remove from heat. Stir in egg yolk, remaining butter, orange rind, orange juice and lemon juice. Combine the sprouts, orange pieces and sauce. Serves 6 to 8.
