Orange-Raisin Carrots
Ingredients
8 medium carrots, sliced
1/3 C. raisins
1/3 C. orange juice
1 Tbsp. firmly packed brown sugar
1 tsp. cornstarch
1/2 tsp. grated orange rind
1/4 tsp. ground ginger
Cooking Instructions
In a large saucepan, bring 1/2″ water to a boil over high heat. Add the carrots. Lower the heat and simmer, covered, for 7 to 9 minutes or until carrots are crisp-tender. Drain. Meanwhile, in a small saucepan, stir together the remaining ingredients. Bring to a boil over moderate heat, stirring constantly. Cook for 2 minutes or until mixture is thickened, stirring constantly. Pour over the carrots; toss until mixed.
