Orange Raisin Bread
Ingredients
1/4 C. boiling water
1/2 C. raisins
1 small orange
9 tsp. sugar
1 egg white
1 tsp. vanilla extract
2-1/2 tsp. vegetable oil
1 C. flour minus 1 Tbsp. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground ginger
Cooking Instructions
Preheat oven to 325 degrees F. Pour boiling water over raisins in a small bowl; set aside. Grate the orange, saving the rind. Peel off and discard the white membrane. Cut up orange pulp. Place orange pulp, raisins and water in blender. Blend just until raisins are chopped, not pureed. In a large bowl, combine raisin mixture, orange rind, sugar, egg white, vanilla and oil. Mix. Add flour, baking powder, baking soda, salt and spices. Add to wet ingredients, stirring until moistened. Place batter in a 4 by 8 loaf pan, or one sprayed with a nonstick cooking spray. Bake 25 minutes until lightly browned. Cool in pan 10 minutes, then remove to rack. Serve warm or cool.
