Orange-Glazed Beets
Ingredients
1 1/4 lb. fresh beets
or 32 oz. canned diced beets, drained
1/3 C. orange marmalade
1 Tbsp. cornstarch
1 Tbsp. honey
1 Tbsp. cider vinegar
1/8 tsp. ground cinnamon
dash ground allspice
Cooking Instructions
Trim fresh beets 1/2″ above the stems. In a large saucepan, cover the beets with lightly salted water. Bring to a boil over high heat. Lower the heat and simmer, covered, for 40 to 45 minutes or until almost tender. drain, removing the beets. Cool slightly. Peel by slipping off skins while still warm; cut into 1/2″ cubes. (Or use cubed canned beets.) In the same saucepan, stir together the remaining ingredients. Bring to a boil over moderate heat, stirring constantly. Stir in the beets. Cook for 3 to 4 minutes or until beets are heated through, stirring occasionally. Serves 4.
