Orange Doughnuts
Ingredients
4 C. flour
3 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
2 Tbsp. shortening
2 eggs
2 Tbsp. orange rind, grated
3/4 C. orange juice
Cooking Instructions
Measure and sift together. With a spoon, work 2 tablespoons shortening until soft. Gradually add sugar. Beat until light and fluffy. Add eggs, well beaten, and orange rind. Beat until well blended. Add dry ingredients alternately with orange juice. Beat well. Chill 1 hour or more. Roll out on lightly floured board to 1/2 inch thick and cut with cutter. Fry at 375 degrees, turning once until golden. Drain and cool on paper toweling. Dust with cinnamon sugar or powdered sugar.
