Orange Chocolate Crunch Cake
Ingredients
2 C. orange sections; about 6 oranges
1/2 C. orange juice
2 eggs
1 tsp. vanilla
1/4 tsp. almond extract
1 2/3 C. flour
1 C. sugar
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 C. brown sugar
1 C. walnuts; chopped
6 ounces semi sweet chocolate chips
Cooking Instructions
Preheat oven to 350. Peel and section oranges. Cut sections into small pieces. Combine the orange pieces and orange juice. Beat eggs and add oranges, vanilla and almond extract. Mix well. Sift dry ingredients together and add all at once. Pour into a greased and floured 9 x 13 pan. Combine the brown sugar, chocolate chips and nuts. Sprinkle on top of cake. Bake at 350 for 45-50 minutes. Freeze until firm, about 4 hours overnight. To serve, garnish with whipped topping, remaining fudge topping, strawberries or maraschino cherries. Serve immediately.
