Orange Chocolate Cake
Ingredients
2 C. sugar
3/4 C. cocoa
1 3/4 C. flour
1 1/2 tsp. baking powder
1 1/2 Tbsp. baking soda
1 Tbsp. salt
2 eggs
1 C. orange juice
1/2 C. oil
2 Tbsp. grated orange peel
1 C. boiling water
Orange Chocolate Frosting:
3 C. powdered sugar
1/2 C. butter
2 Tbsp. orange juice
1/2 C. cocoa
1 tsp. grated orange peel
Cooking Instructions
Preheat oven to 350. In bowl, combine sugar, cocoa, flour, baking powder baking soda and salt. Beat in orange juice, oil, eggs and grated orange peel. Beat for 2 minutes on medium speed. Stir in boiling water. Batter will be thin. Pour into two 9-inch greased and floured pans. Bake for 30-35 minutes. Cool and frost. Orange Chocolate Frosting: Mix 1 C. powdered sugar, cocoa, butter, orange juice and orange peel until creamy. Gradually add remaining powdered sugar. If frosting is too stiff, add 1 to 2 more Tbls. of orange juice. Beat until creamy.
