Orange Blueberry Streusel Cake
Ingredients
1/4 C. sugar
2 Tbsp. all-purpose flour
2 tsp. orange rind, grated
1/2 tsp. ground cinnamon
1 Tbsp. margarine
16 ounces light wild blueberry muffins
3/4 C. fresh orange juice
1 tsp. vanilla extract
1 egg white
Vegetable cooking spray
Cooking Instructions
Combine sugar and next 3 ingredients in a bowl; cut in margarine with a pastry blender until mixture resembles coarse meal. Set aside. Remove blueberries from muffin mix box. Drain and rinse blueberries, and set aside. Combine muffin mix and next 3 ingredients in a bowl, stirring just until dry ingredients are moistened. Gently fold in blueberries. Pour batter into an 8-inch square baking dish coated with cooking spray. Sprinkle sugar mixture over batter. Bake at 400 for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.
