Ingredients
3/4 C. flour
2-1/2 tsp. baking powder
1-1/4 C. yellow cornmeal
1 egg
4 Tbsp. margarine, melted, divided
1 C. skim milk
1 Tbsp. Italian herb seasoning
1/2 C. sliced onion
2 green onion tops, chopped
Cooking Instructions
In a mixing bowl, sift flour and baking powder together and blend. Add cornmeal, beaten eggs, 2 Tbls. melted margarine, and milk. Stir just until blended. Pour 1/3 of batter into non-tick loaf pan. Sprinkle herb seasoning on batter in pan; then pour in about 1/3 more batter. Repeat herbs; then pour the remainder of the batter. Sauté sliced onions and green onion tops in 2 Tbls. margarine until golden brown. Place on top of batter. Bake at 400 degrees F. for 30 minutes, or until done.
