Oliffs Sunday Morning Breakfast Cake
Ingredients
1 C. sifted all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
2 eggs
1 C. granulated sugar
1 tsp. vanilla
1 Tbsp. butter or margarine
1/2 C. hot milk
TOPPING:
1/4 C. butter or margarine
2 Tbsp. evaporated milk or cream
2/3 C. brown sugar, firmly packed (use light brown sugar)
1/8 tsp. salt
2/3 C. chopped nuts
Cooking Instructions
*Self-rising flour may be used, thus omitting baking soda and powder. Heat oven to 350 degrees. sift first 3 ingredients. Beat eggs until very thick and lemon colored, about 5 minutes. Add granulated sugar slowly, continuing to beat with beater. Stir in vanilla, then sifted dry ingredients. Quickly stir in hot milk combined with 1 tablespoon milk melted in it. Pour quickly into greased pan about 12 x 18 x 1 inch. Bake in oven at 350 degrees about 25 minutes. TOPPING: Work together with spoon, butter and cream until creamy. Gradually add brown sugar with work until cream. Stir in nuts and salt. When cake is done, spread nut mixture on top, in pan. Broil golden brown. Makes a dozen squares.
