Oatmeal Breakfast Cake
Ingredients
2 C. oil
3 C. sugar
8 eggs, beaten
4 tsp. salt
4 C. milk
8 tsp. baking powder
12 C. oatmeal
2 tsp. cinnamon
2 C. diced peaches or apples (optional)
1-2 C. sliced almonds or ground pecans (optional)
Cooking Instructions
1. Thoroughly mix all ingredients together. 2. Pour into two 10 x 13 inch pans. 3. Bake 30 minutes at 350 degrees. 4. Serve with warm milk and cinnamon. This recipe freezes well and is excellent to make ahead of time, then take on a camping trip. Serves 16 plus.
