Emerald Pea Pasta
Ingredients
1 C.(s) frozen green peas, defrosted
2 Tbsp. chopped fresh mint
1 1/2 C.(s) all purpose flour
1 pinch salt
1 pinch pepper
Cooking Instructions
Place peas and mint in a food processor and puree. Add remaining ingredients and pulse until a ball of dough forms. Turn out onto a floured surface and knead until smooth and pliable like a firm bread dough. Place dough in a bowl, cover with plastic wrap and let rest for at least 30 minutes. Shape and cook dough as desired.
