Nectarine Salad
Ingredients
1 pound nectarines, pitted and cubed
1/2 C. sweet red pepper, chopped
1/4 C. green onions, thinly sliced
1/4 C. vegetable oil (less, as desired)
2 Tbsp. lime juice
1 Tbsp. cider vinegar
1/4 tsp. salt
1/8 tsp. black pepper, ground
leaf lettuce
Cooking Instructions
Combine nectarines, red pepper and onions in a small bowl. Whisk together oil, lime juice, wine vinegar, salt and pepper. Pour over nectarine mixture. Refrigerate. Mound on lettuce to serve.
