Mulligatawny
Ingredients
1 1/2 pounds lamb stew meat diced
3 Tbsp. butter
1 onion minced
1 Tbsp. curry powder
2 Tbsp. flour
1/3 C. lentils
2 tart apples peeled, diced
1 bell pepper diced
2 carrots diced
1 tsp. sugar
1/2 tsp. ground mace
1/4 tsp. ground cloves
Salt to taste
Freshly ground black pepper to taste
1 C. coconut milk
Cooking Instructions
Brown the meat in butter in a skillet. Add onion, curry powder and flour and cook and stir for 2 minutes. Combine with remaining ingredients, except coconut milk, and 2 quarts of water in the crock pot. Cover and cook on low 8 to 10 hours. Add coconut milk, heat through, and serve with rice.
