Monterey Jack Cheese Quiche Squares
Ingredients
3 egg substitute equivalents
1 C. cottage cheese plus 2 Tbsp. cottage cheese
1/4 C. flour plus 2 Tbsp. flour
3/4 tsp. baking powder
1 C. shredded Monterey Jack cheese
1/2 C. diced green chilies
2 Tbsp. diced red pepper
parsley sprigs
Cooking Instructions
Preheat the oven to 350 degrees F. Beat egg substitutes and cottage cheese together in a medium bowl for 2 minutes until smooth. Add the flour and baking powder and beat until smooth. Stir in the cheese, green chilies, and red pepper. Coat a square 9-inch pan with nonstick cooking spray and pour in egg mixture. Bake for 30 to 35 minutes until firm. Remove the quiche from the oven and allow to cool for 10 minutes, making it easier to cut. Cut into squares and transfer to a platter. Garnish with parsley sprigs, and serve.
