Mock Sausage And Peppers
Ingredients
1 Tbsp. vegetable oil plus 1 tsp. vegetable oil
1/2 C. green pepper, finely minced
1/2 C. onion, finely minced
1-1/4 pounds ground turkey
1/4 tsp. ground sage
1/4 tsp. dried thyme
1/4 tsp. dried marjoram
1/8 tsp. ground savory
1/4 tsp. pepper
1/2 tsp. fennel seeds, crushed
1/4 tsp. salt
Cooking Instructions
Heat oil in skillet, add peppers and onions and cook until tender, about 10 minutes. Cool. Combine peppers and onions with turkey and remaining ingredients, mixing well. Chill an hour or so to blend flavors. Form into 8 thin patties. Cook in nonstick skillet until lightly browned on both sides.
