Mock Chocolate Rum Truffles
Ingredients
3 eggs
1/4 C. water
2 Tbsp. light rum, or 1 tsp. rum extract
1 Tbsp. frozen orange juice concentrate, thawed
26 packages Equal
1/3 C. cocoa
1-1/3 C. fine, dry breadcrumbs
Cooking Instructions
Beat eggs with water, rum and orange juice concentrate until thick and lemon colored, 5 to 7 minutes. Gradually add Equal. Fold in cocoa and breadcrumbs; mixture will become very dense. Shape rounded tsp. of the mix into balls. Let stand at room temperature until outsides are dry. Store in airtight container in refrigerator.
