Migas
Ingredients
1 – 2 Tbsp. butter or oil
8 – 10 eggs, slightly beaten
4 green onions, chopped
1/2 bell pepper, chopped/diced
1 C. grated cheese
3/4 C. tortilla chips, crushed
Sour cream
Picante sauce
Cooking Instructions
Saute onions and bell peppers in butter/oil. Add eggs and stir. Just before eggs are cooked, add cheese and tortilla chips. Top with sour cream and/or hot sauce. Serves 4.
