Microwave Sweet And Sour Stuffed Cabbage
Ingredients
1 large head cabbage
1 lb. lean ground beef
1 C. raw rice
1 C. raisins, divided
1 diced onion, divided
32 oz. tomato sauce
3 Tbsp. lemon juice
2 Tbsp. brown sugar
1 C. ginger snap crumbs
2 tsp. salt
Cooking Instructions
Wrap whole cabbage in plastic wrap and cook on HIGH (9) for 10 minutes or until tender, but still slightly firm. Meanwhile, combine rice, 1/2 C. raisins, 1/2 C. onions and one tsp. salt. Using the larger outer cabbage leaves, place about 2 Tbsp. of mixture on each cabbage leaf and roll securely. Chop remaining cabbage and place on bottom of a 3 qt. casserole. Top with stuffed cabbage, seam side down. For sauce, combine remaining raisins, onion and salt with tomato sauce, lemon juice, brown sugar, ginger snap crumbs and one cup water. Pour over stuffed cabbage. Cover with plastic wrap. Insert probe into liquid. Cook on HIGH (9); HEAT & HOLD at 180 for 1 hour and 40 minutes.
