Microwave Quinoa Pilaf
Ingredients
1/4 C. red bell pepper, diced
2 cloves garlic, minced
1 small onion, chopped
1 tsp. sesame oil
3/4 C. quinoa
1-1/2 C. chicken broth
1/2 C. green beans
Cooking Instructions
Place pepper, garlic, onion and sesame oil in a 4-C. glass measure. Microwave, uncovered, on high for 2 minutes and stir. Add quinoa and broth. Microwave on high for 5 minutes, stirring once. Microwave on medium at 50 percent for 15 minutes. Add peas; stir to mix. Microwave on high another 2 minutes or until liquid is absorbed. Grains should be pearly with white outline visible. Fluff with a fork.
