Microwave Mississippi Mud Cake
Ingredients
1 C. butter
1/2 C. cocoa
2 C. sugar
4 eggs
1 1/2 C. flour
1/4 tsp. salt
2 tsp. vanilla
1 1/2 C. chopped nuts
FROSTING:
1/2 C. butter
1/3 C. milk
1/4 C. cocoa
Dash of salt
1 tsp. vanilla
1 (1 lb.) box confectioners’ sugar
Cooking Instructions
Microwave butter and cocoa for 2 minutes on high in 2 1/2 quart bowl. Stir in sugar and eggs. Add in flour, salt, vanilla and chopped nuts. Bake in 12″ x 18″ glass dish for 10 to 11 minutes on high. Turn at 5 minutes. Spread on 2 cups mini marshmallows.
FROSTING:
Microwave butter, milk and cocoa 2 minutes on High. Stir in salt, vanilla and confectioners’ sugar. Pour onto cake. Serve with a cold glass of milk and enjoy.
