Microwave Meatloaf
Ingredients
1 1/2 lb. ground beef
2 C. soft bread cubes
1/2 C. finely chopped celery
1/2 C. chopped onion
1/4 C. chopped green pepper (optional)
1 1/2 tsp. salt (or less)
1 egg
1/2 C. catsup
SAUCE:
1/2 C. catsup
1/4 C. chili sauce
2 Tbsp. brown sugar
1 Tbsp. lemon juice
1 tsp. dry mustard
1 tsp. Worcestershire
Cooking Instructions
Mix well. Pat evenly into 9×5 inch glass loaf pan. Brush meatloaf top with sauce or brush with catsup or barbecue sauce. Microwave for 25-35 minutes on medium high (roast) until well done in center, about 140 degrees. Pour off liquid and let stand, covered with foil for 5 minutes before serving.
