Mexican Miracle Casserole
Ingredients
1 1/2 to 2 lbs. hamburger, browned, reserve grease
1 onion and bell pepper, chopped
1/2 – 1 lb. grated Cheddar cheese
10-12 flour tortillas
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel tomatoes
Cooking Instructions
In a 9″x 13″ dish, layer beef, onion, and green pepper. Dip tortillas in broth. Layer this and 1/2 the cheese. Repeat, leaving some cheese until last. Cover with soups, then remaining cheese. Spread 1/4 to 1 can Rotel tomatoes, depending on how hot you like it. Bake one hour at 350ΒΊ.
