Melt In Your Mouth Blueberry Cake
Ingredients
2 egg whites
1/4 C. sugar
1/2 C. butter
1 tsp. vanilla extract
3/4 C. sugar
2 egg yolks
1 1/2 C. flour; sifted
1 tsp. baking powder
1/3 C. milk
1 1/2 C. blueberries
Cooking Instructions
Beat the egg whites until stiff. Add 1/4 C. sugar. In a separate bowl cream the butter, add salt and vanilla, add the remaining sugar and egg yolks. Beat until light and fluffy. mix the flour and baking powder, add alternately with the milk to the creamed mixture. Fold in the egg white mixture and the blueberries. Grease a 8 x 8 inch pan. Pour in the batter and sprinkle the top with granulated sugar. Bake in a 350 oven for about 50 minutes or until it tests done. Place the pan in the upper 1/3 of the oven
