Meatball Sub
Ingredients
Vegetarian
1 C. tvp granules
1 C. boiling water
1/2 C. breadcrumbs
1/4 C. whole-wheat flour
1/2 tsp. salt
1/4 tsp. cayenne
1 tsp. sage
1/2 tsp. fennel
1 tsp. oregano
1/2 tsp. garlic powder
1/2 tsp. thyme
1 tsp. olive oil
4 each submarine rolls (individual)
1 C. spaghetti sauce, warmed
2 medium green bell peppers, roasted and sliced into strips
Cooking Instructions
Combine tvp and boiling water and let stand until the water is absorbed, about 5 minutes. Add breadcrumbs, flour, salt, cayenne, sage, fennel, oregano, garlic and thyme. Mix well. Form tvp mixture into 12 balls. Rub olive oil on palms and roll each ball in your hands to coat them. Place on lightly oiled cookie sheet and broil until browned, 10 minutes. Place three balls in each roll and top with sauce and peppers.
