Marinated Shish Kabab
Ingredients
5 cubes per person sirloin steak, very lean, cut in 1 1/2-inch cubes
2 sm. fresh potatoes, parboiled, per skewer
3-4 whole buttered mushrooms per skewer
2 sm. onions per skewer
3-4 pieces green pepper per skewer
3-4 pieces firm ripe tomatoes, quartered, or whole Tiny Tims, per skewer
2 sm. pieces corn on cob, parboiled, per skewer
1 sm. can crunchy water chestnuts
Melted butter
6-8 individual sized skewers
Cooking Instructions
Marinate steak cubes in beef marinade. Have your coals in the grill hot – to the ash-grey stage – before you begin cooking. Cut vegetables evenly and neatly for equal doneness and attractiveness. Grease skewers ahead of time and rub with a piece of garlic to ease in spearing and to add flavor. Alternate meat and vegetables on skewers as desired. Top skewer with a water chestnut to help hold them firm. Broil kababs about 5-6 inches above coals, turning often. Baste meat during cooking with the remaining marinade. Baste vegetables with the melted butter. Cook about 6 or 7 minutes to each side. Remove ingredients from skewer with a fork, gently. While you are cooking this you can also spear “Brown ‘n Serve” rolls, brush with butter, and warm. This is an easy way for the hostess to serve them and is in keeping with the atmosphere. Serves 6.
