Maple Fudge Cake
Ingredients
Sift together into mixing bowl:
2 C. sifted all-purpose flour
1 tsp. baking powder
3/4 tsp. baking soda
1 tsp. salt
1 C. sugar
2/3 C. cocoa
1 C. firmly packed brown sugar
Add:
2/3 C. shortening
1 C. milk
Beat for 2 minutes at medium speed.
Add:
3 unbeaten eggs
1/4 C. more milk
1 tsp. vanilla
Cooking Instructions
Beat for 1 1/2 minutes on medium speed. Turn into two 9-inch round layer pans, well greased and lightly floured. Bake in moderate oven (350) for 30-40 minutes. Cool and frost with Maple Frosting. Frosting: Cook 1 1/2 C. maple syrup in saucepan over low heat until a little syrup dropped in cold water forms a hard ball (250 F). Meanwhile, beat 3 egg whites until stiff. Add syrup to egg whites in a slow, steady stream, beating constantly until thick enough to spread. Stir in 3/4 C. chopped pecans.
