Maple Apple Spice Cake
Ingredients
1 1/2 C. flour
1 tsp. baking powder
1 tsp. ground cinnamon
3/4 C. butter, softened
2/3 C. firmly packed light brown sugar
2 eggs
3/4 C. pure maple syrup
1 1/2 tsp. vanilla extract
2 small all purpose apples, pared and finely chopped (about 1 1/2 C.)
3/4 C. chopped nuts
Cream cheese frosting
3 ounces cream cheese; softened
1 Tbsp. milk
1 tsp. vanilla
2 1/2 C. powdered sugar
Cooking Instructions
Preheat oven to 350 degrees. Stir together flour, baking powder and cinnamon; set aside. In large mixer bowl, beat margarine and sugar until fluffy. Add eggs, syrup and vanilla; mix well. Add flour mixture; mix well. Stir in apples and nuts. Pour into well-greased and floured 9 inch square baking pan. Bake 40-45 minutes or until wooden pick inserted near center comes out clean. Cool. Spread with Cream Cheese Frosting. Store covered in refrigerator. Cream Cheese Frosting: In small mixer bowl, beat cream cheese, milk, and vanilla until smooth. Gradually beat in powdered sugar until smooth and of spreading consistency.
