Macaroons
Ingredients
1 egg, separated
1 C. artificial sweetener
2 C. cornflakes
1 C. shredded coconut
1/2 C. chopped pecans (optional)
1/2 tsp. almond extract
Cooking Instructions
Beat egg white until stiff but not dry. Fold in sweetener equivalent to 1 C. sugar. Add remaining ingredients. Drop by teaspoonfuls onto greased baking sheet. Bake at 350 degrees F. for 12 minutes. Remove from pan at once.
