Lunch Box Snack Cake
Ingredients
1/2 C. country morning blend
3/4 C. sugar
3/4 C. brown sugar
2 1/4 C. flour
1 C. buttermilk
2 eggs
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. salt
1 1/2 C. apples; chopped
Topping
1/2 C. salted peanuts; chopped
1/4 C. sugar
1/4 C. brown sugar
1/2 tsp. cinnamon
Cooking Instructions
Heat oven to 350. In large mixer bowl combine margarine, sugar and brown sugar. Beat at medium speed until well mixed. Add all remaining cake ingredients except apples. Beat at medium speed, scraping bowl often, until well mixed (1 to 2 minutes). By hand, fold in apples. Pour into greased and floured 13 x 9 inch pan. In small bowl stir together all topping ingredients. Sprinkle over cake batter. Bake for 35 to 45 minutes or until wooden pick inserted in center comes out clean.
