Lumachine With Sun Dried Tomatoes
Ingredients
12 ounces lumachine, farfalle or elbow shaped pasta
15 each sun dried tomatoes, the unmarinated type, cut into strips
3 Tbsp. olive oil
1 each garlic clove, chopped
salt and pepper, to taste
thyme, to taste
Cooking Instructions
Cook the pasta and sun dried tomatoes in boiling water until the pasta is tender. Drain (the water may be reserved for soups or stews, etc since it will be flavored by the cooking tomatoes). Toss in the oil, garlic, salt, pepper and thyme. Serve immediately.
