Lite And Tasty Four Flavored Pound Cake
Ingredients
1 3/4 C. sifted cake flour
2 tsp. baking powder
1/4 tsp. salt
3/4 C. white sugar
1/2 C. vegetable oil
1/2 C. skim milk
3/4 tsp. vanilla extract
1/2 tsp. almond extract
1/2 tsp. lemon extract
1/4 tsp. rum extract
4 egg whites, stiffly beaten
Cooking Instructions
Spray the bottom of a 9x5x3 inch loaf pan with cooking spray; dust with flour and set aside. combine flour, baking powder, salt, and sugar. Add oil and milk; beat at medium speed with an electric mixer until batter is smooth (batter will be thick) Add extracts; fold in about one third of the egg whites. Gently fold in remaining egg whites. Pour batter into prepared pan. Bake at 350 degrees for 40 minutes, or until a wooden pick inserted in center comes out clean. Cool in pan for 10 minutes, remove from pan, and finish cooling on a wire rack.
