Lime Chicken Shish Kabob
Ingredients
2 chicken breasts, cut in cubes
2 limes, juice of
2 cloves garlic, minced
1 Tbsp. low sodium soy sauce
1 Tbsp. apple juice concentrate
8 oz. medium mushrooms
1 red bell pepper, cut in 1-inch cubes
16 white pearl onions
1 green bell pepper, cut in 1-inch pieces
2 small zucchini, cubed
Cooking Instructions
Combine lime juice, garlic, soy sauce and apple juice and marinate the chicken in it in the refrigerator for at least 2 hours, turning occasionally. Alternate chicken and vegetables on skewers. Grill or broil for about 10 minutes, turning and basting with marinade.
