Lima Bean Bake
Ingredients
2 C. dried lima beans
1 1/2 tsp. salt
1/4 C. unsulphured molasses
1/4 C. chili sauce
1 Tbsp. cider vinegar
cayenne pepper to taste
1/2 tsp. dry mustard
1 onion, chopped
1 C. diced cooked smoked ham
6 slices bacon
Cooking Instructions
Day before, wash and pick over the beans. Cover with water and let soak overnight. Next day, add the salt and simmer until beans are almost tender, about 45 minutes. Preheat oven to 325ΒΊ. Drain beans, reserving liquid. Combine the molasses, chili sauce, vinegar, cayenne and mustard. Mix with 1 C. of reserved liquid. Layer the beans with the onion and ham in a deep casserole. Pour the molasses mixture over all. Top with the bacon. Bake, uncovered, for 1 1/2 hours, adding more liquid during baking if necessary. Serves 6.
