Lentil Nut Loaf
Ingredients
1 C. lentils washed
2 C. water
1 large onion chopped
1 C. mushrooms chopped
2 Tbsp. oil
1 C. nuts ground
1 C. breadcrumbs
1 Tbsp. lemon juice
1 Tbsp. soy sauce
salt and pepper
1 Tbsp. mixed herbs
Cooking Instructions
Cook lentils in water till soft (1/2 hr). Sauté onions and mushrooms in oil till soft. Mix with remaining ingredients. Place in a greased baking pan and bake at 350F for 30 minutes. Garnish with parsley.
