Lemon Potatoes
Ingredients
2 lb. baking potatoes, cut into 2″ cubes
boiling salted water
1 tsp. grated lemon rind
1/4 C. butter, melted
1/4 C. chopped parsley
3 Tbsp. chopped chives
1/4 tsp. nutmeg
salt and pepper to taste
1/4 C. lemon juice
Cooking Instructions
Preheat oven to 450°. Cover potato pieces with boiling salted water. Bring to a boil and simmer for 4 minutes. Combine remaining ingredients, except lemon juice. Toss potatoes with mixture. Turn into a greased casserole dish and bake for 25 minutes, or until potatoes are tender. Pour lemon juice over all. Serves 6.
