Lemon Oatmeal Crispies
Ingredients
2/3 C. vegetable oil
1 tsp. lemon flavoring
2/3 C. brown sugar
1 C. all purpose flour
1/2 C. egg whites
1 C. rolled oats
2 Tbsp. lemon juice
1/2 tsp. baking powder
2 Tbsp. grated fresh, or finely chopped lemon rind
1/2 tsp. baking soda
1-1/2 C. crispy rice cereal
Cooking Instructions
Place oil and brown sugar in a mixer bowl; mix at medium speed until creamy. Add egg whites, lemon juice, rind and flavoring; mix at medium speed to blend well. Stir flour, oatmeal, baking powder, and baking soda together to blend well; add to creamy mixture while beating at medium speed. Stir in cereal. Drop by tablespoonfuls onto cookie sheets left ungreased, or lined with aluminum foil. Bake at 350 degrees F. for 8 to 10 minutes, or until cookies are lightly browned. Remove to a wire rack; cool to room temperature.
