Lemon Chicken 1
Ingredients
1/2 pound boneless skinless chicken breast
1 tsp. sunflower or canola oil
1/4 C. water
1/4 C. lemon juice
2 tsp. soy sauce
1 tsp. grated fresh ginger root
1 tsp. grated lemon rind
1 tsp. cornstarch
1 tsp. Equal Spoonful
1/4 red sweet pepper, cut into strips
Cooking Instructions
Slice chicken breasts into thin strips. Heat oil in skillet; brown chicken strips. In a small bowl whisk together, water, lemon juice, soy sauce, ginger root, lemon rind and cornstarch. Add this to chicken in skillet and stir fry for 5 minutes until the mixture is bubbly. Stir in Equal Spoonful and fold in red pepper strips before serving.
