Lemon Cake Pie
Ingredients
9-inch pie shell, unbaked
1/2 C. sugar substitute
2 Tbsp. flour
2 Tbsp. margarine, soft
1 Tbsp. lemon rind
3 Tbsp. lemon juice
1 C. skim milk
2 eggs, separated
Cooking Instructions
Combine sugar replacement, flour, margarine, lemon rind and juice, skim milk, and egg yolks. Beat vigorously. Fold in egg whites (well beaten). Pour into unbaked pie shell. Bake at 325 degrees F. for 1 hour, or until set.
