Kale
Ingredients
5 lb. kale
boiling water
2 tsp. salt
1/4 C. butter
Cooking Instructions
Remove the coarse stems and the center ribs from the kale leaves. Wash very thoroughly until no sand remains. Cover leaves with boiling water. Bring to a boil. Drain. Cover with boiling water again and add the salt. Cover and cook until tender, about 20 minutes. Drain and chop. Toss with the butter. Serves 6.
