Jumbo Fruited Oatmeal Cookies
Ingredients
3/4 C. butter, or margarine, softened
3 eggs
3/4 C. thawed, frozen, unsweetened apple juice concentrate
1-1/2 tsp. vanilla
1-1/2 C. all purpose flour
1-1/2 C. uncooked rolled oats
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. allspice
6-oz. package dried mixed fruit, chopped (about 1-1/3 C.)
1/2 C. coarsely chopped nuts
Cooking Instructions
Preheat oven to 350 degrees F. Beat butter in large bowl until creamy. Blend in eggs, apple juice concentrate and vanilla. Add flour, oats, baking soda, salt, cinnamon and allspice; mix well. Stir in dried fruit and nuts. Drop scant 1/4 cupfuls of dough, 3 inches apart, onto lightly greased cookie sheets; flatten slightly. Bake 12 to 14 minutes, or until edges are lightly browned. Cool 1 minute on cookie sheets, then transfer to wire rack to cool completely. Store in tightly covered container.
