Jewish Apple Cake
Ingredients
2 C. sugar
2 C. flour
3 Tbsp. baking powder
1 C. oil
4 eggs
2 1/2 tsp. vanilla
1/3 C. orange juice
6 apples; pared, thinly sliced, dropped into lemon water and drained well
1 C. sugar
1 Tbsp. cinnamon
Cooking Instructions
Mix together the sugar and cinnamon. Sift the other dry ingredients together and put in a large bowl. Add the eggs, oil, vanilla, and orange juice, mixing well. Pour 1/4 of batter into a greased and floured tube pan. Top with 1/4 of apples; sprinkle with 1/4 of sugar/ cinnamon; continue layering, ending with sugar/cinnamon. Bake in a preheated 350 oven for 1 1/4 to 1 1/2 hours; cool on a wire rack.
